What Can Vegans Eat? THIS!


I've been on a blogging hiatus but still vegan! The most popular question I get from people is, "What the heck do you eat?!?" Some answers below :)

ETHIOPIAN FOOD- Rahel Ethiopian Vegan Restaurant in Little Ethiopia
My friend and I got the Veggie Paradise Combo, which consists of:

Split lentil stew, Yeatkilt stew, split-pea stew, string beans mixed with carrots, Zucchini stew, Greens, Chopped tomatoes mixed with onion & jalepeno, sunglower mixed with Injera and Ethiopian salad. It comes with a spongey flat bread called Injera, that you top with the different dishes and eat. I couldn't tell what was what but I tried everything and it was all delicious! This combo could definitely be shared with 3 or 4 people, the plate was HUGE. Another plus of Rahel's-- it is dog friendly!

I went to the location in Westwood and got the Baja Surf Tacos which I LOVED- it had great texture and lots of flavor. It's 2 soft corn tortillas with crispy battered Tempeh (a type of soybean cake), homemade surfer sauce, salsa fresco, cabbage, and guacamole. I also got a salad on the side which came with their house dressing that wasn't my fave, I'd try another one the next time I go.

"TUNA" SALAD- Made using the recipe from "The Vegan Table"
I made this for 3 weeks straight after discovering it! The "tuna" is made from chickpeas that are ground up to a similar texture as canned tuna. Then chopped celery, carrots, red bell peppers, parsley, vegan mayo, mustard, salt, and pepper are added. It's easy to make and you can change the amount of ingredients you want to put in depending on your preference. Prep time takes awhile due to the chopping of everything up but it's kind of nice to take that time and enjoy the process of cooking! I love seeing all the veggies chopped in tiny uniform squares and the bright red, greens, and orange next to each other- it's a beautiful color palette! I usually make a tuna salad sandwich or put it in a pita.
*Chickpeas are a great source of folic acid, fiber, protein, iron, copper, zinc, and magnesium.

CHICKEN-LESS STRIPS- Ready made from Trader Joe's

Like the package says, it took me 2 minutes to heat them up on the
stove top. I like the flavor and texture, it comes lightly seasoned and I didn't feel like I needed to add anything else to it. I topped my salad with these and it definitely made me feel fuller and added some flavor and protein to my meal.

DELI BOLOGNA- Yves Brand, from Whole Foods
This is my favorite lunch "meat". I know I haven't had real bologna/meat for a long time so I don't know if it's because of that but when I first tried this, it totally reminded me of real bologna minus all the nasty animal parts in it!
There's also the Tofurkey brand of lunch "meat" which I will buy if I only go to Trader Joe's (I only found Yves at Whole Foods) but I prefer this bologna. On a side note, why is bologna spelled so weird?!
